
Black bean & avocado salad
This vibrant black bean salad combines protein-rich black beans, creamy avocado and zesty lime for a quick, satiating, and flavour-packed side dish perfect for any meal.
Ingredients

1 cup cooked black beans

½ red bell pepper chopped

2 tbsps chopped red onion

½ avocado diced

2 tbsps lime juice

A generous pinch of chilli powder

A generous pinch of cumin

A pinch of sea salt.
Method
- In a large mixing bowl, combine the black beans, pepper, onion and avocado.
- Add the lime juice, chilli powder, cumin, and salt to a mason jar. Seal with a lid and shake until combined.
- Pour dressing over the black bean mixture and stir until evenly mixed. Serves 1.
